Jollof Rice with a Twist: Red Rice

Ingredients

For 3-4 portions:

- 115g basmati rice

- washed

- 10-12 cherry tomatoes

- halved- 1 red pepper

- sliced into strips

-2 small onions

- 0.5cm slices

- 4 cloves garlic

- finely chopped

- 100g feta (broken up), 1 lime

- 1 heaped tbsp tomato puree

Directions

1. Grind the cinnamon, bash open the cardamoms and mix in all the other spices

2. In no oil, sear the tomatoes for 5 mins to give them a char and leave aside

3. Bring oil to medium heat, add in the onions and peppers and season with salt and a good amount of black pepper

4. Once soft, add in the garlic, the spice mix, tomato puree, rice and stir well

5. Add the water, mix, cover with a lid and simmer for 15 minutes. After this turn off the heat and leave for 10 mins - don't lift the lid!6. Prepare the topping by mixing lime flesh, broken up feta, chilli flakes and coriander7. Stir the rice and top with the feta mix
