Strawberry Cream Cheese Pandesal
- 1 Cup Lukewarm Milk- ¼ Cup Softened Butter- ¼ Teaspoon Red Food Coloring- ¼ Cup Sugar- ½ Teaspoon Salt- 1 Large Egg- 4 Cups All Purpose Flour- 2 ½ Teaspoons YeastStrawberry Syrup:- 2 Cups Diced Strawberries- ½ Cup Sugar- Cream Cheese Filling:- 1 Cup Cream Cheese- 3 Tablespoons Strawberry JamCoating:- ¼ Cup Breadcrumbs
1. In a small bowl, fold in the strawberry jam into the cream cheese. Blend well using an electric hand mixer. Place at the bottom of a Ziploc bag, remove the air and then place inside the freezer and set aside.2. Place the diced strawberries and sugar in a small pan and bring to a boil. Reduce the heat to low and simmer for about 20 minutes or until the strawberries are soft and the liquid thickens. Remove from heat and strain the strawberry liquid through a fine mesh strainer, separating the solid strawberries from the liquid. Add the milk into the strawberry syrup and mix well.3. In a stand mixer, add the flour, salt, sugar and yeast and whisk at a low speed.4. Add the egg, and the butter in 3 parts and slowly add the strawberry mixture.5. Knead on medium speed for 8-10 minutes.6. Rub oil to both hands and form the dough into a ball.7. Lightly coat the bowl with oil and place the dough back in, covering with a plastic wrap and kitchen towel.8. Place in a warm area and let it rise for 45 minutes.9. While waiting for the dough to rise, prepare the cream cheese filling and try to divide into 24 equal parts.10. Punch down the dough and divide into two equal parts.11. Cover half of the dough with a plastic wrap.12. Shape the dough into a rectangle and roll the dough slowly, pinching and sealing each time to form into a log.13. Divide the log into 12 pieces.14. This recipe will yield 24 pieces of pandesal.15. Flatten the dough gently with your bare hands and put the cheese on top.16. Gather and stretch out the ends, pinching to seal. Shape into a ball and roll the dough in breadcrumbs.17. Place on a baking sheet lined with parchment paper.18. Repeat the same process for the remainder of the dough.19. Cover with a kitchen towel and let it rise again for 30 minutes.20. While waiting, preheat your oven to 350 F.21. Bake the Strawberry Cheese Pandesal for 15 minutes or until slightly browned.
